Potato bread with reduced gluten?

I realize that this is a tall order. I’d like to make potato bread for a Halloween dinner I’m going to. But since I have people in my family with minor gluten allergies, I’d like to make one with a reduced gluten. Can rice flour be easily substituted? How about using half the bread flour and using rice flour alongside it? Does that work? (I’ve never used alternative flours).

One Response to Potato bread with reduced gluten?

  • Glutenfreegirl says:

Hi. In order for the bread to be gluten free it needs to be COMPLETELY gluten free, meaning no wheat, rye, barley or oats can be used in the flours.

That being said, found this recipe online, never tried it:

I enjoy the cookbook "bette hagmans’ gluten free gourmet" U may find a recipe in there if u look for the book in your library.
Generally speaking you need to use a mix of gluten free flours and xantham gum in your recipe.
Try going to the Yahoo Health Group "SillyYaks" and joining, and looking in their recipe files.

    Best of luck!
